Huckleberry Ridge Farm got started when the LeRoux family bought a lovely piece of land in Western NC. Judy LeRoux says, “ I am doing all things I always wanted to do one by one. We have bees, ducks, chickens and rabbits, a greenhouse and a large garden. This has supported us through meager times, enabling us to eat well.”
Their farm is HACCP certified, which means they have taken the FDA course in harvesting rabbit for restaurants. Judy goes on to say, “we are a small farm choosing better welfare of our animals, rather than getting too big and not giving the animals the care they need.”
Huckleberry Ridge Farm’s motto is “love your food and it will love you!”
